The Birth of Breakfast Success - History of The first Chez Cora restaurant in Quebec

Cora TsouflidouIn May 1987, Cora Mussely Tsouflidou bought a defunct snack bar on Cote-Vertu Road in the Ville Saint-Laurent district of Montreal and embarked on a venture that would take her further than she'd ever dreamed. After only a few months of operation, Cora, the kitchen magician, transformed the little snack bar into a whole new breakfast concept in Quebec, which specialized in fruit, cheese, cereal, omelettes, pancakes, and French toast.

Inspired by family traditions, customer requests and suggestions from her children, Cora created new breakfasts, which blended the best of traditional breakfasts with new health food trends. Cora improved upon her traditional breakfasts and conjured up more than 100 new ideas.

These inventive new breakfasts were complemented by a colourful, child-like illustration on the walls of her Cote-Vertu snack bar. This playful imagery later became her signature logo in restaurants throughout her future chain.

The little snack bar in Ville Saint-Laurent soon became such a huge success that Cora's children had to leave school to help her with her burgeoning business. After only a few months of operation, Chez Cora became the breakfast destination of choice.

Her philosophy: “Ingredients and a service of the highest quality. Offer your clientele the best and they will come back. If we serve the best breakfasts in town, will they go elsewhere?” Cora wonders.

By then, word of mouth had turned Cora's into a popular breakfast spot and its reputation for inventive breakfasts soon exceeded its ability to serve the demand. The family decided that mom would open a second Cora's, while the children would manage the snack bar in Côte-Vertu. In February 1990, a second Cora's opened on St-Martin Blvd. in the Laval, near Montreal. The new restaurant generated a lot of press and confirmed the concept's success. A few months later, with the help of a former colleague, Cora opened a third restaurant that was three times bigger than the first two. That was quickly followed by five more restaurant openings. The Cora family of restaurants just kept getting bigger and better, especially with the addition of new business partners, which Cora's own family personally trained.

Cora Mussely Tsouflidou was born into a modest family in Caplan, a little village in the Gaspe peninsula. Cora had all the ingredients for success right from the very start. In 1960, she enrolled at Montreal's Cardinal Leger Institute, promising to pay for her education. There she studied Latin, Greek, literature, art and other courses that would prepare her for a professional career. But destiny had other plans: Cora was now expecting her first child, so she quit college during her final year to devote herself to her new family, and to the two other children who would soon follow. Cora abandoned her plans for a career to become a loving full-time mom.

When her husband left her ten years later, Cora was suddenly a single mother with three teenagers to support. With her characteristic aplomb, Cora bought a small neighbourhood canteen, worked hard, tripled its value and sold it. Not one to rest on her laurels, she became a hostess in a well-known Montreal restaurant, where she worked her way up the ladder as a day manager, general manager and junior partner. For the next five years, Cora perfected her knowledge of the foodservice industry until she mastered all aspects of the hospitality trade.

Even after the 20th anniversary of the network, Cora remains up to date in the industry and regularly visits restaurants. She ensures that her standards of quality are being respected by remaining in contact with her customers, her main source of inspiration and motivation. Cora takes to heart and remains implicated in the creation of new dishes by testing and evaluating new recipes in order to better introduce them in the restaurants.

In the business world, Cora is the best example of a “self-made business woman”. In 2003, she wins the Governor General’s award. She has also won several awards including the Ernst & Young Entrepreneur of the Year award in the Manufacturing / Consumer Products Category, the Pinnacle Award and the Tops in Hospitality Award from Food Service and Hospitality magazine.

In 2004, Mrs. Cora Tsouflidou, was inducted into the Canadian Professional Sales Association’s Hall of Fame and in 2005 she received the Hall of Fame award from the Canadian Franchise Association.  The company has been named one of Canada’s 50 Best Managed Companies three years in a row since 2006. In 2006, Cora also won the “Femmes d’Affaires du Quebec” award for Entrepreneur of the year, granted by the “Reseau des Femmes d’affaires du Quebec Inc.
